Thira means "wave" in Malayalam — the beautiful language spoken by over 35 million people in the southern Indian state of Kerala. It's a land of long, sun-kissed coastlines, winding rivers, serene backwaters, and lush coconut groves that stretch as far as the eye can see.
Kerala is renowned for its natural beauty, earning the name God's Own Country. But it's equally famous for its extraordinary food. Fish and tapioca form the staple diet, while coconut — from which Kerala takes its very name — is used abundantly in almost every preparation, with coconut oil as the primary cooking medium.
